Изменения для прокси в этой версии сделаны во встроенном проксичекере. В самом зеннопостере и раньше можно было задавать хост текстом, вы правы. С указанным багом это вряд ли поможет.

You should just try executing actions you made and see the resutls.

You should use Data>Work with directories, get list of files from directory with profiles, then get random from received list of profiles.

There is no so much to tell you actually. You should work with target website in browser in ProjectMaker, monitor http requests which sent during your work in browser and make actions from related requests.
