Set REMOTE_ADDR

Hello,
is it possible to set in the header a different REMOTE_ADDR that can be verified with https://whoer.net/#extend ?

REMOTE_ADDR is a way to look up the IP of an incoming request. You have to use a proxy if you wish to change it.

Yes I know, I already use proxy and vpn to do this but I was trying to understand if there are other methods

There's not. You cant just make up an IP or use one you don't have access to.
